Margarita Cupcakes

I have this little hobby.  I like to make cupcakes.  And cookies.

This summer I decided that I NEEDED a blog to archive my baking adventures.  I convinced my husband that it would be well worth the money to pay someone to design it for me.  And, it WAS!  Erin at edub did a fantastic job!  And it would have taken me a hundred years to figure it all out.

Then I got busy.  See, I'm a teacher and started a new job.  While I've been teaching for 14 years, starting a new job makes me feel like a newbie again.

You know how if you wait long enough, things that are probably fairly simple become huge, insurmountable projects in your head?  Well, getting this blog officially started seemed like I might as well be carving out a new Mount Rushmore.  Totally impossible.

So, here I am today.  We are in the middle of a snowstorm--which is a freak of nature event in Seattle--my oldest son is spending the night at a friend's house and my youngest son is watching old 1960's episodes of Spider-Man on Netflix.  I finally have time to figure out this blogging thing.

After much personal debate about what to give my first post to, I've settled on Margarita Cupcakes.  I LOVE these cupcakes and get requests for them a LOT.  I love the idea of transforming a yummy cocktail into a yummy cupcake.  I'm going to experiment with Cosmo cupcakes this weekend.  I'll let you know how it goes.

Here's the recipe for Margarita Cupcakes.  Give them a try and let me know what you think.

Mix one box white cake mix, 3 eggs, 1/2 cup melted butter, and 10 ounces margarita mix (I prefer Margaritaville).  With spring-loaded ice cream scoop, scoop into cupcake pan and bake at 350 for 20 minutes.  When cooled, top with lime buttercream and roll edges in clear sparkling sugar.
